WINEMAKING: The whole grapes are pressed
softly, the must is clarified with
nitrogen blowing to protect the aromas
Primary. Fermentation takes place in tanks of
temperature-controlled steel. After the
alcoholic fermentation the wine is decanted and
continues its aging on its lees until the following spring.
